The Christmas Season is approaching its main event, and I am too excited! I love Christmas time. Usually, my massive family gets together, we have a massive Christmas Day lunch and just spend time with each other. I am also a big gift giver, I love making people feel special and spoiling them a bit. This year, seeing as I don’t have a job yet, I needed to be a bit more creative in the gifts I can give. So I thought – HOMEMADE BISCUITS! I wanted to make something Italianish, something new. So I searched Pinterest, and came across this WINNER! Simple Homemade Choc-Chip Biscotti!
Thank you to Miss in the Kitchen for sharing this recipe. It is delicious, and makes for perfect Christmas gifts! I had to stop myself from eating too many because they are just so moreish! I loved them so much, I made a second batch haha. Stew loved them too! And even better, they are great to send to people who live far away! Oh, if you are running out of stocking fillers… problem solved!
I get quite excited when I make winning recipes haha, I just want to make more and experiment! I can’t wait to try more of her recipes as well as try some variations of this one! I am thinking white choc-chip with cranberries. OR even lemon poppy seed! Oh my goodness I must just go make some now.
Being away from family during this Christmas Season has been tough, but knowing I can still make some gifts to send back and just sharing the Christmas love with others warms my heart! I think this is definitely going to become my new Christmas tradition. It is so
So get your baking gear out, play some Christmas tunes and DEFINITELY give it a try! Happy baking!
Simple Choc-Chip Biscoti
- 1/2 cup Softened Butter
- 1 cup Brown Sugar
- 2 Large Eggs
- 1 tsp Vanilla Extract
- 2 1/2 cups All Purpose Flour
- 2 tsp Baking Powder
- 1/2 tsp Salt
- 200 – 300 g Mini Chocolate Chips
Preheat oven to 180 degrees Celcius.
Add the butter and brown sugar to a large mixing bowl. Beat at medium speed until creamy.
Add eggs and vanilla, mixing until combined, about 1 minute.
Add flour, baking powder and salt, mix until well combined. Fold in mini chocolate chips.
Shape into 2 10″ x 2″ logs and place on a lined or greased baking sheet.
Bake 22 to 25 minutes. Remove from oven and allow to cool 30 minutes.
Lower oven temperature to 150 degrees Celcius.
Slice logs into about 1/2 inch slices and place on cookie sheet. Each log will make about 18-20 slices. Bake 15 minutes. Flip slices over and bake an additional 15 minutes.
Remove to a wire rack to cool. Store in an airtight container.
