Quick and Easy Pesto Chicken Dinner


A simple and delicious dinner to impress your guests!

It’s easy to get into a routine when it comes to cooking. Repeating dishes weekly is a thing. Especially when you work late and gym and you just don’t feel like, or have time to, making something new. I was there, and am still there – and I have loads of time on my hands! So don’t feel bad. That being said, I have been trying to use that time to think of different, easy but yummy dinners to mix things up! This quick and easy Pesto Chicken is a winner!

Packed with flavour and super simple, this Pesto Chicken is great on a working weeknight OR when you want to impress guests! Seriously, it’s one of those dishes that looks fancy, and tastes so good you feel like you ordered it at a restaurant!

How is it so easy? Well, I use a cheat – ready made Pesto. I know, I know… but store bought Pesto is still really good! Make sure you buy a good brand (it doesn’t have to be expensive) and you are set!

I have made this dish with both Red Pesto and Green Pesto, and they are both SCRUMPTIOUS! Our favourite is the Green Genovese Pesto (Basil Pesto with Parmigiano in it). One thing I look for though is that the Pesto colour is vibrant, and not creamy.

Yummy chicken made with 4 ingredients ONLY!

Yup! Chicken, pesto, fresh tomato and grated cheese. I have used Mozzarella, Emmental and White Gouda cheese before. My favourite was the Gouda, but the others are great as well! Feel free to use whatever cheese is your favourite.

You can serve this with whatever starch or veg you love! I serve mine with Quinoa and peas. There is something about the delicious juices from the pesto and the melted cheese on the Quinoa that just makes you giddy fromย the deliciousness! I think couscous will be amazing with this as well… so I will do that next!

Quick and Easy Pesto Chicken Dinner

  • 500 g Boneless Chicken Breasts Sliced in half
  • 190 g Jar of Pesto Whichever you prefer
  • 1 Large Tomato Sliced
  • 1 - 2 cups Grated Cheese Your preference

Salt for seasoning


  1. Preheat the oven to 180 degrees Celcius. 

  2. Slice the chicken in half and cover the pieces (all over) with the Pesto in an oven dish, add a bit of salt. I do this 2 hours before cooking but you can do this in the morning, or just before cooking as well. The flavour is still the same.

  3. Place the chicken in the oven and cook for 20 to 25 min. Check that the chicken is just about cooked.

  4. Remove the chicken from the oven and set the oven to grill (usually at 200 degrees Celcius).  

  5. Place the tomato slices over the chicken pieces. Add a bit of salt on them. Then cover everything with the grated cheese.

    *The amount of cheese is completely up to you ๐Ÿ™‚ 

  6. Bake for another 10 min.

  7. Enjoy ๐Ÿ™‚
