It has been a stressful few months for me here in Germany. Work has been draining and unfortunately left me with little motivation to be creative and bake delicious goods. HOWEVER… having no baked goods to enjoy is never allowed in this house, so our go-to treat these past few weeks has been these easy, but DELICIOUS, orange and coconut oat cookies.
Well, that is the flavour they ended with, not the flavour they started with. This recipe began as a yummy oatmeal raisin recipe. A wonderful friend shared a recipe she uses for these incredible oatmeal raisin cookies (which you can find on the LIVE WELL bake often website), and I decided to start adapting the recipe to use things I had in the house.
Because we try not to have a lot of sugar, I first reduced the amount of sugar in the recipe -and that worked out really well! Stew then had the idea to add peanut butter (no sugar peanut butter of course) and that was a definite winner! I must add that he has been the true idea generator behind these cookies. Thanks, Stew!
His next brilliant idea was to add orange to the recipe. And thus, a star recipe was born. We also happened to have some desiccated coconut in the house, which of course works so well with orange! I added raisins as well the first time I made this recipe and left them out the second time (because we ran out of raisins and I was too lazy to go to the store). Both were really delicious and both are highly recommended.
I love this recipe because you really can adapt it and make it your own with whatever flavours you have in the house or simply what you like. I will be making an orange cranberry batch today – super excited.
So here is my version of orange and coconut oat cookies for all those who wish to try it 🙂
Orange and coconut oat cookies
- 1 cup all-purpose or whole wheat flour
- 1/2 tsp baking soda
- 1 1/2 cups rolled oats
- 115 g butter at room temperature
- 1/2 cup brown suagr 1/4 cup works as well
- 1 large egg
- 1 tsp vanilla extract
- zest of 1 orange
- juice of 1 orange
- 1/2 cup desiccated coconut with extra to sprinkle over cookies
- 1/2 cup raisins this is optional, you can also add more if you prefer
Prepare a large baking tray with baking paper.
In a large mixing bowl, mix the flour, baking soda and oats.Put aside.
In another large mixing bowl, add the butter and sugartogether. Mix at a medium speed with an electric mixer until soft and fluffy.
Add in the egg, vanilla and orange zest, and mix untilcombined.
Slowly add in the dry ingredients and mix slowly until combined.
Lastly,add in the orange juice, desiccated coconut and raisins. Mix until combined.
Put the mixture into the fridge for 30min.
Preheat the oven to 180 degrees Celcius.
Roll the cookie mixture into balls (about the size of a ping pong ball), and place them on the baking tray.
Sprinkle some coconut on each of the cookies.
Bake the cookies for 15min until they are lightly golden ontop. Allow the cookies to cool before enjoying them with a cup of coffee or tea.
