Okay, so this recipe is not too different from the yummy banana oat pancake recipe I posted the other day. Yes, I love bananas, I love oats, and I love to bake. And so I am on a mission to try all combinations of banana and oats because it is healthy (well healthier) and delicious. Also, I do not have any proper baking equipment yet, so I have to make do with what I have – a bread tin and a blender stick! Anyone for a slice of banana oat bread?
Again, this is a super easy recipe that you can prep in 5 min! It does have to cook for 40 min, but that’s okay! It gives you time to do those quick house chores or prep other yummies for tea time. And when it is done, all you need is some butter, freshly brewed coffee/tea, a movie and mmmmmm… banana heaven!
Literally just throw all the ingredients into a blender (or bowl if you have a hand blender like me). A little bzzzzzzt bzzzzzzzt. Into a greased bread tin. Topped with some almond flakes, bake for 40 min and BANANA_BAM! done! I love, it, Stew loves it, and I hope you will too!
Healthy Blender Banana Oat Bread
- 3 Very Ripe Bananas
- 2 cups Oats
- 2 Eggs
- 1/4 cup honey
- 1 tsp Baking Soda
- 1 tsp Vanilla Essence
- 1 Handful of Almond Flakes
You can add dark chocolate chips, nuts or dried fruit if you would like to give it that extra kick!
Preheat the oven to 180 degrees Celcius and grease or line your bread tin with baking paper.
Ad all the ingredients, EXCEPT the almonds or extras you have chosen, to the blender. Blitz until smooth.
Add any extras you wish (like chocolate chips) and mix through with a spoon.
Pour the mixture into the greased bread tin and scatter the almond flakes over the top.
Bake for 40 min or until a toothpick comes out clean. allow to cool slightly and serve warm.
You can also store it in a container in the fridge.
