We LOVE banana bread! It’s one of the best tea time treats to have on a Sunday afternoon. Well, actually in our house we could eat it all day every day haha. I tried a few recipes for banana bread and found one that is so moist and delicious, added some cranberries and BAM… MAGIC!
I found this recipe on an awesome site called Stress Baking, and I am so glad I tried it because it works so well every time. Thank you Stress Baking for the recipe, I will definitely try more! I made it once with some chopped walnuts, and once with cranberries, both are delicious! I am sure that you can add whatever extras you enjoy in your banana bread and it will work out great! So here is the recipe as I used it. Happy baking!

Banana Cranberry Bread
Ingredients
- 3 ripe bananas mashed up
- 2 eggs
- 1/3 cup buttermilk
- 1/2 cup Greek yoghurt
- 1 tsp vanilla extract
- 1/2 cup brown sugar
- 1 3/4 cup all purpose flour
- 1 tsp baking soda
Optional extras
- 1 cup cranberries
- 1/2 cup chopped pecans/walnuts
Instructions

Preheat the oven to 170 degrees Celsius and spray a loaf tin with non-stick spray.

In a large bowl, mash the bananas until smooth.

Add the eggs, buttermilk, Greek yoghurt and vanilla to the banana and whisk/lightly beat together until combined.

Add in the sugar and mix again until combined.

Add in the flour and baking soda and mix until combined (not too much).

Add the cranberries and fold in.

Pour into the prepared tin and bake on the lower oven rack for 60 min or until a toothpick comes out clean.

Allow it to cool in the tin for a while before turning it onto a cooling rack.

Enjoy it while it is still slightly warm and with some butter!
