Banana Cranberry Bread

  • 3 ripe bananas mashed up
  • 2 eggs
  • 1/3 cup buttermilk
  • 1/2 cup Greek yoghurt
  • 1 tsp vanilla extract
  • 1/2 cup brown sugar
  • 1 3/4 cup all purpose flour
  • 1 tsp baking soda

Optional extras

  • 1 cup cranberries
  • 1/2 cup chopped pecans/walnuts


  1. Preheat the oven to 170 degrees Celsius and spray a loaf tin with non-stick spray.

  2. In a large bowl, mash the bananas until smooth.

  3. Add the eggs, buttermilk, Greek yoghurt and vanilla to the banana and whisk/lightly beat together until combined.

  4. Add in the sugar and mix again until combined.

  5. Add in the flour and baking soda and mix until combined (not too much).

  6. Add the cranberries and fold in.

  7. Pour into the prepared tin and bake on the lower oven rack for 60 min or until a toothpick comes out clean.

  8. Allow it to cool in the tin for a while before turning it onto a cooling rack.

  9. Enjoy it while it is still slightly warm and with some butter!
