Deliciously Healthy Choc-Chip Oat Cookies

Ingredients

  • 1/2 cup Dark Chocolate-Chips
  • 1 tbsp Desiccated Coconut
  • 3 tbsp Butter, room temperature
  • 3 tbsp Honey
  • 2 cups Rolled Oats (Gluten Free if you wish)
  • 1/2 cup Fresh Raspberries or 1 Orange
  • 1 Egg

Instructions

  1. Pre-heat the oven to 180 degrees Celcius.

  2. Use an electric mixer or whisk to cream together the egg and butter.

  3. Add in the oats, honey, coconut, choc-chips and raspberries/orange. Mix together with the mixer/whisk, and then use your hand to work the batter for 2 min. It will be a bit wet, this is normal.

  4. When the batter has come together, roll small balls and place them on a lined baking tray. flatten them slightly, and bake for 12 minutes. They should be golden brown.

  5. Remove from the oven and allow to cool down completely (still on the baking tray). Enjoy!
