Pasta with a Creamy Tomato, Bacon and Pea Sauce

Stew and I usually save our pasta cheat dish for the weekend, and even then we eat Gluten-free pasta. We also tend to choose our favourite sauce – Bolognese – 80% of the time! Haha it is just so yummy we can’t get enough! But last weekend I was in the mood for a pasta dish my sister Serena makes – with a creamy tomato, bacon and pea sauce. It’s actually a sauce for her pasta bake… but having just moved we don’t have a baking dish that will work yet. So, I decided to make it as a normal sauce… and man was it a good idea!

My favourite pasta sauces are usually tomato based. I will make an Alfredo/Carbonara every now and then though – especially for Stew. This sauce hits all the right spots – salty bacon, yummy peas and a creamy tomato base. Topped with some Parmigiano or even melting Mozzarella, and you will be in pasta heaven!  Mmmm… I might just make more now!

Some notes for my pasta sauces:

  • I never measure anything… ummm whoops. I usually just go with my gut. but I have been trying to keep track of measurements for these recipes.
  • You need to cook tomato-based sauces for at least an hour to maximize the depth of flavour.
  • Keep tasting! Always taste your sauces to make sure the flavours are what you like and seasoning is good!

Pasta with a Creamy Tomato, Bacon and Pea Sauce

Prep Time 10 minutes
Cook Time 1 hour
Total Time 1 hour 10 minutes
Servings 4 people

Ingredients

  • 1 tbsp Olive Oil
  • 2 tins Peeled Tomatoes blitzed until smooth
  • 125 g Bacon Bits or Sliced Bacon
  • 1 1/2 cups Frozen Peas
  • 1 Onion diced
  • 250 ml Cream
  • 1 tsp Cayenne Pepper
  • 1 tsp Sugar or Honey

Salt to taste

1 packet of pasta of your choice.

Instructions

  1. Heat the olive oil in a medium-sized pot. Then add the diced onion and bacon. Fry these at a medium heat until the onions are soft and bacon slightly crispy.

  2. Add in the blitzed tomato, cayenne pepper, sugar/honey and some salt. Mix together and bring to the boil. 

  3. Once boiling, add the peas and stir in. allow to cook for 5 min and then lower the heat to a simmer for 15 min.

  4. Then add in the cream. Mix together and allow to simmer on for 30 min. Remember to taste the sauce for seasoning.

  5. Cook your pasta of choice as per packaging instructions or to your personal preference.

  6. Once the pasta is cooked, add it to the sauce and stir gently together. 

  7. Serve with grated Parmigiano or Mozzarella on top. Enjoy 🙂
