It’s getting cold outside! I am still waiting for the snow, but the icy breeze has definitely arrived. And what better way to warm our bellies, and our hearts, than to have a bowl of the best, most delicious, lentil soup! This is another one of my favourite meals my mom makes for us! My spirits lift with every mouth full! And to make it to food-heaven, I like enjoying it with a fresh warm bun! You know, those bread rolls that are crisp on the outside and fluffy clouds on the inside? Mmmmm, yup!
“Who ate my leftovers?!”
As per usual, with most of my mom’s meals, there is ALWAYS the “shotgun” moment when we smell the lentil soup cooking. You know, “shotgun the leftovers for lunch tomorrow”. I think one of the biggest fights in our house (when I still lived there, and when I visit, and probably when I am not there), is who gets leftovers or takeaways. Even my dad will ask if there is enough for him to take to work the next day. Silly, I know, but we REALLY enjoy this dish. It adds an extra hot coal on the “shotgun” fire.
Oh, and let’s not talk about waiting to eat it for dinner. My mom makes the soup early in the afternoon, so we have to smell the amazingness until dinner! Yup, I am pretty sure we all took spoonful samples throughout the afternoon. Just to make sure it tasted as good as always hehe.
This recipe is not vegetarian (sorry), it has bacon – mmmm – and pork sausages in it. BUT, I am pretty sure you could make it vegetarian. I haven’t tried it, but I am sure you can leave the meat out and replace the beef stock with vegetable stock. The only thing would be to find an extra flavour punch. I’ll do some research and try it out someday for my vegetarian friends!
Some recipe notes:
- This recipe is adapted from the original (in one of my mom’s cookbooks somewhere). The original uses bacon bones, we use bacon pieces.
- This is a super easy one-pot-wonder, so don’t be afraid to try it.
- The sausages and bacon add so much flavour to the dish, and the stock adds more than enough seasoning. I sometimes add some extra pepper, but I never need to add salt.
- Lentils are AMAZING, give them a chance!
- It’s also super for when you have people over for winter dinner parties!
Here’s your winter warmer lentil soup recipe:
Mamma's Lentil Soup
- 250 g Lentils
- 250 g Bacon pieces
- 400 g Pork Sausages
- 2 Large Carrots, diced
- 2 Celery Stalks, sliced
- 1 Onion, diced
- 15 g Butter
- 1 tbsp Olive Oil
- 400 g Tinned Tomato, mashed up with a fork, or blitzed until smooth
- 1 l Water
- 2 Beef Stock Cubes
First, heat the oil and butter in a medium to large size pot. When hot, add in the sausages and brown them slightly. For about 3 to 5 min.
Next, add in the onion and carrots, and cook until they have softened. For 3 to 5 min.
Then add in the bacon and celery, allow to cook until the bacon has browned slightly. About 3 min.
Stir in the lentils, allowing them to take up a bit of flavour - about 1 min.
Next add in the stock cubes, tinned tomato and water. Stir together and allow to come to the boil. Once it has come to the boil, turn down the heat, and allow to gently simmer for 1 and a 1/2 hours, stirring every now and then.
Season to taste, and serve with warm bread rolls!
