Lucia’s Quick Chocolate Cookies

Nothing better than chocolate cookies!

 

Baking is probably my biggest passion. I love baked treats and making them makes my heart happy. The smell of chocolate cookies in the kitchen, a cake come out of the oven without sinking, perfectly whipped frosting being licked from the bowl, and my family smile when they take a bite of what I have made – a priceless feeling.

When I am down, baking cheers me up, when I am happy, I bake to express it, when I am bored, it’s time to bake. It is soothing and comforting and generally just AWESOME. Moving to another country is exciting, but I have moments where I am down and miss my family, so naturally… I want to bake! Nothing crazy or grand, something that doesn’t need hundreds of ingredients, something simple and yummy… COOKIES!

My sister Lucia makes these absolutely epic chocolate cookies. I am not sure where the recipe comes from, but man they are just what you need when you are craving something chocolate to have with your coffee or glass of milk.

are so moreish it is crazy and SUPER easy to make! Which is good because you may finish the first batch as they come out of the oven and need to make more.

So here they are – don’t say I didn’t warn you when you finish the cookies in one go!

Lucia's Quick Chocolate Fix Cookies

Prep Time 10 minutes
Cook Time 10 minutes
Total Time 20 minutes

Ingredients

  • 100 g Margarine/Butter Spread
  • 50 g Caster Sugar
  • 100 g Self-raising Flour
  • 25 g Cocoa

Instructions

  1. Preheat the oven to 180 degrees Celsius.

  2. Line baking trays with baking paper and set aside.

  3. Add the sugar and margarine to a bowl and mix together until creamy.

  4. Work in the flour and cocoa until mixed together. If the batter looks a bit too dry - add a splash of milk until combined and you have a sticky cookie batter,

  5. Roll teaspoon fulls of the mixture into balls and place on the tray.

  6. Lightly squish them with a fork - just to leave a print on them.

  7. Bake for 10 min.

  8. Enjoy with a glass of milk 🙂
