I have never been a big fan of pancakes – but waffles and flapjacks I can eat all day every day! There are days where I feel like a simple pancake with just a bit of cinnamon and sugar and some lemon juice. But it’s more likely that I will crave some fluffy flapjacks with Nutella on.. or jam and cheese! Mmmm! And so these easy peasy banana oat flapjacks were born!
Often on a Sunday evening, my dad would make a batch of flapjacks, we would put all kinds of toppings on the table and just have a flapjack feast. Little circles of joy! Yup… just thinking about them makes me want to whip up a batch. But, I am doing my best (with a few cheats) to stay Gluten and Refined Sugar-Free, so I found a healthier way to fill the void!
*Okay okay, almost healthy! The Nutella is only for cheat days. Otherwise, I enjoy these babies with some homemade Chia Berry Jam and sugar-free peanut butter! YUM!
So for this recipe…
With some Pinterest research done and some practice, I managed to make a simple banana oat flapjack recipe that is really yummy and extremely satisfying. I could make them every day! 5 ingredients (with endless possibilities), a few minutes and BOOM – happy Gabi (and Stew of course).
So here it is – may it fill the craving and leave you smiling!
Easy Banana Oat Flapjacks (sugar & flour free)
- 1 Medium Banana mostly ripe
- 2 Eggs
- 1 cup Instant Oats
- 1 Tbsp Honey
- 1 tsp Cinnamon
If you would like you can add: 1 tsp vanilla essence, some chocolate chips, melted dark chocolate, almond flakes.
Add all the ingredients to a blender (or into a bowl if you have a stick blender like I do) and blend until just smooth.
Heat a pan that has either been sprayed with spray-n-cook or add a tsp of coconut oil like I do.
Fry your flapjacks! You can make about 6 or 7 small ones or 2 big ones like we do. About 2 minutes a side for the big ones. They should be golden on each side and spring when you touch them.
Serve with whatever topping you enjoy most and a delicious cup of coffee or tea!
